First Post!


I know.... it's taken me a long time to start this blog... over a month actually. I just put too much pressure on myself to make it perfect... To say everything I wanted to say about having Celiac, and my journey...

It's not going to happen this post! I just need to post something! So I thought I'd start with this:

Baked Buffalo Chicken

Nothing pleases Ron more than a nice meaty buffalo chicken wing. Unfortunately consumption here is at an all time low due to the gluten in almost every brand out there (I'm sure companies are thinking the recession is really killing their sales... when in reality it was my diagnosis which dramatically impacted their sales). Since Lent is coming up next week, I decided to try and use up the rest of the meat in our freezer.  It was EXTREMELY easy and very good! I think you should try it!

Preheat oven to 450 degrees
Place a baking rack on a cookie sheet
Place Chicken Thighs on baking rack and sprinkle with salt and pepper.
Roast in oven until skin is golden brown (about 30 minutes)
Remove Chicken from oven and brush with Frank's Buffalo Wing Sauce.
Put chicken back in the oven for about 7 more minutes. Remove from oven and eat!

YUM!
